Thyme is a fragrant, easy-to-grow perennial herb prized for its tiny aromatic leaves and earthy, slightly minty flavor. A staple in herb gardens, thyme is both ornamental and practical, forming attractive low-growing mounds that are loved by pollinators while providing fresh herbs throughout the growing season.

Perfect for seasoning meats, vegetables, soups, sauces, and breads, thyme retains its flavor well whether used fresh or dried. Once established, this drought-tolerant herb is remarkably hardy and thrives in garden beds, raised beds, rock gardens, and containers.

  • Type: Open-pollinated perennial
  • Start indoors: 6–8 weeks before the last spring frost or direct sow after frost
  • Sun: Full sun
  • Spacing: 8–12 inches
  • Height: 6–12 inches
  • Days to harvest: 75–90 days from seed

Thyme grows best in full sun and well-drained soil. Water regularly until plants are established, then allow the soil to dry slightly between waterings. Harvest sprigs as needed once the plants are well established, trimming regularly to encourage bushy growth. In colder climates, a light layer of mulch can help protect plants through the winter.
