Description
Thyme is a low-growing perennial herb known for its tiny aromatic leaves and strong, earthy flavor with subtle minty and lemony undertones depending on the variety. It is widely used in soups, stews, roasted meats, vegetables, and Mediterranean dishes.
This hardy herb forms dense, spreading mats or small upright shrubs and is valued for its drought tolerance and year-round garden presence in mild climates. It also attracts pollinators when in bloom and works well in herb gardens, borders, and containers.
- Type: Perennial herb
- Direct sow: Spring after last frost or start indoors
- Sun: Full sun
- Spacing: 10–12 inches
- Height: 6–12 inches
- Days to harvest: 60–90 days (light harvest), perennial thereafter
Thyme grows best in warm, sunny conditions with well-drained, slightly dry soil. It does not tolerate overwatering. Harvest sprigs regularly to encourage fresh growth and prevent legginess. Light pruning after flowering helps maintain a compact, productive plant.
