An easy & tasty way to use up those unripened tomatoes!
1 gallon green tomatoes
1 medium white onion
¼ cup fresh cilantro
4 peppers (serrano, cayenne, jalapenos, etc.)
½ garlic bulb (5 or so cloves)
2 Tbsp lime juice
Cumin, salt & chili powder to taste
Place tomatoes, onion, cilantro, peppers and garlic in pot and bring to a boil. Reduce heat and simmer about 10 minutes. Process in a food processor and add lime juice and seasonings to taste.
