An easy & tasty way to use up those unripened tomatoes!

  • 1 gallon green tomatoes
  • 1 medium white onion
  • ¼ cup fresh cilantro
  • 4 peppers (serrano, cayenne, jalapenos, etc.)
  • ½ garlic bulb (5 or so cloves)
  • 2 Tbsp lime juice
  • Cumin, salt & chili powder to taste

Place tomatoes, onion, cilantro, peppers and garlic in pot and bring to a boil. Reduce heat and simmer about 10 minutes. Process in a food processor and add lime juice and seasonings to taste.
