4 Lemon cucumbers, thinly sliced
1 t salt
1 red onion, thinly sliced
1 C distilled white vinegar
2 T granulated sugar
2 T fresh dill, minced
Pepper to taste
Season cucumbers with salt in a large bowl and let sweat for 1 hour. Drain liquids and toss cucumbers with onion slices.
In a separate bowl, add sugar to vinegar and stir until completely dissolved.
Pour over the cucumber and onions. Stir in dill. Cover with plastic wrap and refrigerate for 1 hour. Serve cold.
