• 2 Tbsp olive oil
  • ½ lb Brussels sprouts, trimmed
  • 1 lb potatoes (we used Magic Molly)
  • 1 large onion, diced
  • 6 strips bacon, cooked & crumbled
  • ¼ cup grated parmesan (optional)
  • Fresh ground salt and pepper to taste

Heat oil in skillet over medium heat. Add Brussels sprouts, potatoes, and onion. Sprinkle with salt and pepper. Let cook for about 10 minutes until it begins to brown, stirring occasionally. Continue to cook until veggies are tender, around 20 minutes total. Sprinkle with crumbled bacon and Parmesan cheese.
