• 30 oz black beans, rinsed and drained
  • 3 cups fresh cooked corn
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 Tbsp. minced shallots
  • 2 cloves garlic, minced
  • 2 tsp. salt
  • ¼ tsp cayenne pepper
  • 2/3 cup olive oil
  • 1 tsp lime zest
  • ½ cup lime juice
  • ½ cup fresh cilantro, chopped
  • 2 large avocados, diced

Combine all ingredients except avocados in a large bowl and mix well. Cover and chill for at least 2 hours. Just before serving, add avocado and mix gently. Serve at room temperature.
