Covington is a widely grown sweet potato variety known for its rose-colored skin, smooth uniform shape, and moist orange flesh. It became especially popular in North Carolina due to its consistent performance, high yields, and excellent eating quality. The roots are typically very uniform and attractive, making it a strong choice for both home gardens and commercial production.
This variety produces medium to large tubers with a rich, sweet flavor and a soft, moist texture when cooked. Covington is especially valued for baking, roasting, mashing, and general kitchen use. Its skin color is a deeper rose tone compared to Beauregard, and it is known for maintaining good quality after harvest and during storage.
Covington is a dependable mid-to-late season variety, typically maturing in 110–120 days under warm growing conditions. It performs best in full sun with long, warm summers and well-drained soil.
Growing Instructions: Sweet potato slips should be planted outdoors only after all danger of frost has passed and soil temperatures are consistently warm (ideally 65°F or higher). Space plants approximately 12–18 inches apart in loose, well-drained soil or raised beds. Set slips deep enough to cover the roots and lower stem, then water thoroughly. Maintain even moisture during establishment, but avoid waterlogged soil. Sweet potatoes perform best in full sun with warm temperatures and light fertilization, which encourages strong root (tuber) development rather than excessive vine growth.
If slips arrive before outdoor planting conditions are suitable, they may be temporarily potted indoors in containers with good drainage. Keep them in a warm, bright location and water lightly to maintain even moisture until they can be safely transplanted outdoors.
