Bayou Belle is an early-season sweet potato variety known for its striking red skin and deep orange flesh, creating a beautiful contrast both in the garden and on the plate. It produces medium to large, uniform tubers with excellent eating quality and a rich, sweet flavor. The texture is smooth and moist when cooked, making it especially well suited for baking, roasting, and mashing.
This variety is valued for its strong plant vigor, good disease resistance, and reliable production. Bayou Belle is considered an early maturing type, reaching harvest in approximately 85–90 days, which makes it well suited for shorter growing seasons, including parts of the Pacific Northwest. Despite its earlier maturity, it still produces good yields when grown in warm, well-drained soil with full sun exposure.
Bayou Belle performs best in warm conditions and should be planted only after soil temperatures are consistently warm. Like all sweet potatoes, it is highly sensitive to cold and benefits from a long, warm growing window to maximize yield and quality.
Growing Instructions: Sweet potato slips should be planted outdoors only after all danger of frost has passed and soil temperatures are consistently warm (ideally 65°F or higher). Space plants approximately 12–18 inches apart in loose, well-drained soil or raised beds. Set slips deep enough to cover the roots and lower stem, then water thoroughly. Maintain even moisture during establishment, but avoid waterlogged soil. Sweet potatoes perform best in full sun with warm temperatures and light fertilization, which encourages strong root (tuber) development rather than excessive vine growth.
If slips arrive before outdoor planting conditions are suitable, they may be temporarily potted indoors in containers with good drainage. Keep them in a warm, bright location and water lightly to maintain even moisture until they can be safely transplanted outdoors.
